Jugged hare is not for the faint hearted, but it is well worth a try … At this time of year they are ready and a great delicacy.

I am thrilled to now own a copy of Mrs Beeton, which tells you how to wash your hare! Her version of dredging it in flour and frying it in boiling butter, is a real cholesterol frenzy so we have calmed it down to be a tasty winter treat.
