Douglas-Fir Pizza Base with Toppings of your Choice…
Makes four medium pizzas
Ingredients & Method
Mix together:
600g strong flour (I am using Yorkshire Organic Millers Stoneground Flour)
10g salt
7g sachet of dried yeast
Douglas-Fir (or any other herb of your choice)
Heat in a pan:
200ml milk
200ml water
(heat until luke warm)
Mix the dough and milk together in a mixer and add 20g local rapeseed oil. Mix on a slow speed for 3 minutes until all the ingredients are incorporated and then place the dough on a tray or in a bowl to prove.
Allow to prove in a warm place for 20 minutes then cut the dough and roll or press the pizza into shape.
Topping
2 tins of Italian chopped tomatoes
2 small onions peeled and chopped (shallots would be good too)
Bacon or cooked ham diced up, we are using raw bacon with the fat removed
1 ball of Buffalo Mozzarella (we are using low fat)
Salt and pepper
Method
Simply fry off the onion in a little oil or low calorie spray and add the two tins of Italian chopped tomatoes. Cook until soft (should take approximately 3 to 5 minutes)
Spoon the hot tomato sauce over the rolled out pizzas. Sprinkle the bacon or ham over the top (or whatever other ingredients you choose), followed by the Mozzarella cheese (again, you can mix and match any cheese you wish!)
Now bake in the oven 180ºc for 20 minutes until cooked. Slice and serve with salad.
